Stellar Spicy Pickled Green Beans

Want to add a special touch to your bloody mary or give your potato salad a kick? Try these super easy pickled green beans:

1 lb green beans, stems trimmed and beans left whole
3 garlic cloves, peeled and left whole
2 teaspoons dill (I used dried, but if you have fresh dill by all means use it!)
1 teaspoon chili flakes
1/2 teaspoon celery seed
freshly ground black pepper to your liking

1 cup white vinegar
2/3 cup water
1 tablespoon sugar
1 teaspoon spicy mustard seeds
2 teaspoons coarse salt

1. Pack the green beans, garlic, dill, chili flakes, celery seeds, and black pepper into a sterilized 1 quart mason jar.

2. Bring the vinegar, water, sugar, mustard seeds and salt to a boil in a small saucepan. Stir and allow to boil for about five minutes.

3. Carefully pour the hot vinegar/water/sugar/salt over the green beans directly into the jar. Make sure there is enough liquid to cover the beans, fasten the lid and refrigerate for three days.
